This beauty of a sparkling Chardonnay is from the Columbia Valley’s 2023 vintage, showcasing a bright green apple bouquet with a hint of grapefruit. Extended swirling and sniffing finds earthy notes and a pleasant yeast aroma.
The palate is lively; bright acidity balanced with delicate bubbles makes this a silky sip. Purists would clutch their pearls if anyone suggested making mimosas; it’s perfect on its own and would support all the classic Champagne pairings: grilled shrimp with garlic/salt/butter, oysters, or a caviar-topped omelette. At most, put a fresh strawberry on the rim of the flute.
